A.J.Foyt's 500 Mile Chili
Ingredients
- 3 lb Stewing beef, cubed
- 1 lb Chorizo (Spanish sausage)
- 2 lrg Onions, diced
- 5 x Cloves garlic, chopped
- 3 x Jalapeno pepper, peeled, diced
- 3 Tbsp. Extra virgin olive oil
- 1/2 tsp Cayenne
- 3 Tbsp. Chili pwdr
- 3 can (15-ounce) tomato sauce
- 1 tsp Salt
- 11/2 c. Water
- 1 can Mexican beer
Directions
- Brown Meat, onions, garlic and jalapenos together in extra virgin olive oil. While mix is browning, add in cayenne and chili pwdr. Stir often. Add in tomatoe sauce, salt, water and beer. Cover and cook on low heat for 30 min, stirring often. Uncover and simmer for 2 hrs.
- Serves 6-8.
