A Great Zucchini Quiche

Ingredients

  • 3 c. Grated, uncooked zucchini, squeezed to drain moisture
  • 1 c. Bisquick or possibly Jiffy Mix
  • 1 lrg Onion, minced (about 1 c.)
  • 1/2 c. Grated Parmesan cheese
  • 1 Tbsp. Fresh parsley, chopped
  • 1/2 tsp Salt
  • 1/2 tsp Oregano
  • 1/2 tsp Garlic pwdr or possibly garlic granules
  • 1 dsh Pepper
  • 1/2 c. Vegetable oil
  • 4 x Large eggs, slightly beaten

Directions

  1. Mix and beat all ingredients, except zucchini. Mix in zucchini. Pour into a greased 10-inch pie plate or possibly quiche pan.
  2. Bake in 350 degree oven till filling is browned and knife inserted comes out clean. (35 to 40 min)
  3. You may add in grated Cheddar cheese and top with Ratatouille (diced eggplant, sliced onions, garlic, green peppers, tomatoes, all sauteed in a little extra virgin olive oil. Season with a little oregano or possibly fresh basil and salt and pepper).
  4. Substitute yellow squash for zucchini. This freezes well and may be warmed in the microwave oven after thawing.
