7 - Up Cake & Pineapple Icing
Ingredients
- 1 box yellow cake mix
- 4 large eggs
- 1 box pineapple or possibly vanilla instant pudding
- 3/4 c. vegetable oil
- 1 bottle (10 ounce) 7-Up
- 2 large eggs, beaten
- 1 1/4 c. sugar
- 1 T flour
- 1 stick butter
- 1 c. crushed pineapple (including juice)
- 1 can shredded coconut
- 1/2 c. English walnuts
Directions
- Put together first 4 ingredients; beat till light and fluffy. Add in 7-Up and beat well. Pour into lightly greased 9 x 13 x 2 inch cake pan (or possibly two 9 inch pans). Bake in preheated 350 degree oven about 40 min or possibly till done. Remove from oven and cover immediately with Pineapple Icing.
- Blend sugar and flour; put together with beaten large eggs, butter and pineapple in saucepan. Cook till thick. Add in coconut stirring till blended then pour over hot cake.
