    3 Spring Green Salad Recipes Here comes spring again, a wonderful time to appreciate all the fresh produce of spring plants out in the market especially from our local vendors. And what better way to eat these than to create a clean, fresh green salad. After all the hot soup, drinks, and fatty food we tend to consume during the winter season combined with holiday breaks, spring is the best excuse to get back into shape and cleanse your body. Simply green salad Let’s start with the most basic one of them all, the simply green salad. This recipe is your best option if you’re caught with just a few greens, and very limited time to prepare. Trust me, all you need for this is already in your kitchen. Ingredients: 8 to 10 cups of mixed greens, preferably with some baby arugula, mache, watercress, dandelions and some hydroponic lettuces (or whatever green salad mix you prefer) 2 tablespoons of chives sliced thinly and finely Kosher salt and ground black pepper 2 to 3 tablespoons of extra virgin olive oil ½ lemon, juiced Directions: Wash all the greens, and drain water by placing in a strainer bowl. Tap off strainer to remove excess water and move to another large bowl. Mix in the finely chopped chives and add salt and ground black pepper, together with the extra virgin olive oil and lemon juice. Mix everything in making sure all is coated with the dressing and then season to taste. #2. Roasted beet salad If you’re a bit bored with just the usual greens tossed in olive oil, here is a spring green salad that is a little bit textured than just the leafy greens. This has beets, a sweet add-on to your salad, and also gives it that extra texture. Since roasting is to be done, it may require additional time of preparation. Ingredients: 2 ½ pounds of small beets (or diced big ones if you only have those) ¼ cup extra-virgin olive oil Coarse salt and flaky sea salt 2 teaspoons of cumin seeds 4 cups of dandelion greens (thick stem parts removed) Directions: Preheat your oven to 400 degrees and season the beets with one tablespoon of olive oil and coarse salt. Place the beets on to the foil lined with parchment paper making sure everything is sealed. Check oven and then roast for about 45 minutes. Remove from oven and allow the beets to cool, then wipe or rub off the skin with paper towels and cut as desired. Place the dandelions and beets in a large bowl. In a skillet, bring the remaining olive oil and cumin seeds to a simmer and add with the salad mixture. #3. Spring blueberry salad Who said salads are just for vegetables? This spring blueberry salad recipe is easy to make, only 5 minutes and you have a fresh fruity dish to snack on. This is a great dish to jumpstart your season as it is a mixture of a variety of flavors. Ingredients: For the green salad: 5 oz of spring green mix 1 cup of blueberries ½ cup chopped walnuts ½ cup crumbled goat cheese For the salad dressing: ¼ cup olive oil 1 tablespoon apple cider vinegar 3 tablespoon blueberries Sea salt and black pepper Directions: To make the salad dressing, toss all the ingredients in a blender and blend until fully combined. Add salt and pepper depending on your taste and blend again until dressing is smooth in texture. On a large bowl, place all the salad greens, berries, walnuts, and goat cheese and mix. Pour the dressing onto the salad and you’re good to go. This blueberry vinaigrette dressing is the perfect compliment for fresh watercress or collard greens too! There are many greens available during spring season, and there’s really no rule on how to mix and match everything.
