    I love when I find a tasty treat that is healthy and yet low in Weight Watcher points! This delicious 3 ingredient pumpkin cookie has zero points (on purple program)💜💜 and is made with whole oats (I use gluten-free whole oats), pumpkin puree or applesauce, and pumpkin spice.  If you are not watching your weight, you will still LOVE them too.. They are a good allergy friendly cookie since they are not only gluten-free, they are also dairy-free, egg-free, and nut-free. I simply mix the oats with applesauce or pumpkin puree and add pumpkin spice. I then pop them in the oven for 10 minutes, and they are ready to enjoy!! I love them as a quick treat or even as a grab and go breakfast. After all. they are basically made from oatmeal.  Zero points baby!! It's easy to vary the flavors too. Sometimes I use pumpkin pie spice, sometimes just cinnamon and sometimes a little cardamom or even vanilla extract!  Now, if you really want to ENJOY~ I top these little gems with melted stevia sweetened chocolate chips. It takes the cookies to a new level, and only brings it to 1 point per delicious chocolate covered cookie.  I had to order the stevia sweetened chips online, it was Lily's brand. You could use any kind of chocolate chip. I simple add 1/4 cup or a little more nut milk to a 1/2 cup of chocolate chips and microwave for about 30 seconds. (check after 15 and stir)  If you don't want to be bothered melting the chocolate, you could just add some chips to the batter.... My son Jonathan does not eat sugar or refined products. I'm always on the look-out for a dessert that I can make for him. The cookie, without the chocolate, will work for his food choices. Love it!!💗💗 They are not sweet, so you could add some stevia, date syrup, or maple syrup (1 tablespoon) to the batter. Melted chocolate Topping1/2 cup of chocolate chips 1/4 cup of nut milk Microwave for 30 seconds and stirUsing a spoon add a half teaspoon of chocolate to each cookie.Refrigerate the cookies after topping each one with chocolate to harden the chocolate.
