Ingredients

  • 1/2 c. soft silken tofu
  • 1/2 c. carrot juice chilled
  • 1/2 c. grated carrots
  • 1 c. frzn yogurt, vanilla
  • 2 Tbsp. frzn orange juice concentrate
  • 1 Tbsp. lemon juice
  • 1/4 tsp grated ginger root
  • 1 pch salt
  • 3 Tbsp. pumpkin seeds optional

Directions

  1. Combine the tofu, carrot juice and grated carrots in a blender. Add in the frzn yogurt, orange juice concentrate, lemon juice, ginger and salt.
  2. Blend till smooth. Add in the pumpkin seeds, if desired, and blend to the desired consistency.
  3. Yield: 2 1/2 c.
