    Ingredients

    • 1.5 - 2 lbs chicken boneless and skinless (2-3 breasts)
    • 2 14 oz fat free chicken broth
    • 1 lb dry great northern beans, soaked in water overnight
    • 1 tsp minced garlic
    • 1 tbsp minced onion
    • 1 tsp oregano
    • 1/2 tsp salt
    • 2 tsp ground cumin
    • 1 tbsp chili powder

    Directions

    1. cook chicken in broth until done.
    2. remove chicken, reserve broth
    3. allow chicken to cool
    4. shred with fork, set aside
    5. drain soaking beans
    6. combine all ingredients
    7. bring to boil then reduce to simmer until beans are done or cook on low 10-12 hours or on high 5-6 hours in crockpot or until beans are tender.
    8. optional ingredients
    9. cayenne pepper if you like it hot
    10. low fat shredded cheddar cheese
    11. lot fat sour cream
    12. cilantro
    13. crushed tortilla chips
