Wedge Salad with Diced Tomatoes and Pancetta

- One head Iceberg Lettuce Cut into 4 wedges
- 2 slices pancetta, diced, cooked crispy
- one Roma Tomato diced
- Creamy Buttermilk Dressing: 1/4 cup buttermilk, one tablespoon mayonnaise
Directions
- Remove core from head of Iceberg Lettuce and cut into 4 wedges
- Rinse, drain
- Fry up diced pancetta crispy, drain on paper towels
- Dice Roma tomato
- In a bowl add buttermilk and mayonnaise and stir well to mix dressing
