  • Split Pea Soup Mix

    Ingredients

    • 1 pkt (16 ounces) dry green split peas
    • 1 pkt (16 ounces) dry yellow split peas
    • 1 pkt (16 ounces) dry lentils
    • 1 pkt (16 ounces) pearl barley
    • 1 pkt (12 ounces) alphabet pasta
    • 1 jar (1/2 oz) dry celery flakes
    • 1/2 c. dry parsley flakes
    • 1 quart chicken broth
    • 1/4 tsp pepper
    • 1 c. cubed cooked chicken, optional

    Directions

    1. Combine the first seven ingredients. Store in airtight containers in a cold dry place for up to 1 year.
    2. Yield: 13 batches (13 c. total). Toprepare soup: In a large saucepan, combine 1 c. soup mix, broth, pepper and chicken if you like. Bring to a boil.
    3. Reduce heat; cover and simmer for 60-70 min or possibly till peas and lentils are tender.
    4. Yield: about 4 servings per batch.
    5. 1-c. serving (prepared with chicken and low-sodium broth) equals 158 calories, 117 mg sodium, 7 mg cholesterol, 26 gm 1 lean meat.
