  • Southwestern Beef And Bean Stew

    Ingredients

    • 1/4 c. All purpose flour
    • 1/2 tsp Salt
    • 1/4 tsp Pepper
    • 1 lb Beef stew meat, cubed 1/2"
    • 1 Tbsp. Vegetable oil
    • 1 lrg Onion, minced
    • 1 sm Green pepper, minced
    • 2 x Cloves garlic, finely minced
    • 1 3/4 c. Water
    • 1 1/2 tsp Low-sodium beef bouillon
    • 1 tsp Chili pwdr
    • 1/4 tsp Dry oregano
    • 1/4 tsp Grnd cumin
    • 1 can (14 1/2 ounce.) no salt added tomatoes, liquid removed
    • 1 can (16 ounce.) pinto beans, rinsed and liquid removed
    • 1 c. Frzn whole

    Directions

    1. Shake flour, salt, and pepper in a large plastic bag. Add in beef; shake to coat with flour mix. Heat oil in nonstick Dutch oven over medium-high heat. cook beef, onion, bell pepper and garlic in oil, stirring occasionally, till beef is brown.
    2. Stir in water, bouillon granules, chili pwdr, oregano and cumin. Heat to boiling; reduce heat. Cover and simmer 1 hour. Stir in tomatoes, beans and corn, breaking up tomatoes; heat through.
