Southwestern Beef And Bean Stew
Ingredients
- 1/4 c. All purpose flour
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1 lb Beef stew meat, cubed 1/2"
- 1 Tbsp. Vegetable oil
- 1 lrg Onion, minced
- 1 sm Green pepper, minced
- 2 x Cloves garlic, finely minced
- 1 3/4 c. Water
- 1 1/2 tsp Low-sodium beef bouillon
- 1 tsp Chili pwdr
- 1/4 tsp Dry oregano
- 1/4 tsp Grnd cumin
- 1 can (14 1/2 ounce.) no salt added tomatoes, liquid removed
- 1 can (16 ounce.) pinto beans, rinsed and liquid removed
- 1 c. Frzn whole
Directions
- Shake flour, salt, and pepper in a large plastic bag. Add in beef; shake to coat with flour mix. Heat oil in nonstick Dutch oven over medium-high heat. cook beef, onion, bell pepper and garlic in oil, stirring occasionally, till beef is brown.
- Stir in water, bouillon granules, chili pwdr, oregano and cumin. Heat to boiling; reduce heat. Cover and simmer 1 hour. Stir in tomatoes, beans and corn, breaking up tomatoes; heat through.
