Shrimp Salsa
Kind of like ceviche, kind of not...but it's great with tortilla chips! Ingredients
- 1/2 pound salad shrimp or larger shrimp, chopped
- 3 roma tomatoes, chopped
- 1 medium red onion, chopped
- 1 cucumber, peeled, seeded and chopped
- 1/4 cup freshly squeezed lime juice
- 1/3 cup chopped fresh cilantro
- 2 jalapeno peppers, seeded and deveined, finely minced
- Salt & Pepper, to taste
Directions
- Combine all ingredients in a large non-reactive bowl.
- Mix to combine.
- Cover and refrigerate for at least 4 hours or overnight for flavors to combine.
