Quick & Easy ~ Black Beans & Rice!

- 1 cup of uncooked rice
- 1 pint of grape tomatoes – halved
- 3 bunches scallions – chopped
- 1 head of garlic – crushed & chopped
- 1 bell pepper – chopped
- 1 bunch of cilantro – chopped
- 1 Jalapeño – chopped with seeds
- 1 29oz. can of black beans - rinsed & drained
- Olive oil – for drizzling
- Seasoning Mix:
- 1 tablespoon – LivingtheGourmet Spice Rub
- 1 tsp. – cumin
- 1 tsp. brown sugar
- Juice of 1 lime
Directions
- Prepare the rice as directed.
- Heat a large frying pan with a few drizzles of olive oil. Add the tomatoes, scallions, garlic, bell pepper, cilantro and Jalapeño. Sauté for a minute or two or until the garlic is fragrant.
- Add the cooked rice to the sautéed veggies and toss. Add the beans, toss and continue to cook on low until everything is evenly heated.
- Combine the ingredients for the seasoning. Add to the rice and beans and again toss.
