    Pork Chops with Cara Cara Honey Soy Sauce

    Ingredients

    • Pork Chops with Cara Cara Honey Soy Sauce
    • 3/4 cup freshly squeezed cara cara juice from about two oranges plus the pulp of one half of an orange, chopped
    • 2- 2 1/2 tbls._ soy sauce_
    • 2 tbls. wildflower honey
    • 2-3 large cloves_ garlic_, chopped finely
    • Scant 1/4 tsp._ powdered ginger_ or
    • 1 1/2 tbls. fresh ginger
    • (some say these are not interchangeable) It will give a different taste, but I think it would work well.
    • 1 tbls. rooster sauce (chili garlic sauce)
    • 3 1 inch-thick_ pork chops_
    • 1/2-2 tbls. grapeseed or other oil
    • 1 tbls. butter
    • 1/2 tbls. chopped_ parsley_
    • 11/2 tbls. toasted sesame seeds

    Directions

    1. Combine first six ingredients.
    2. Preheat pan to medium-high heat.
    3. Add 1/2-2 tbls oil.
    4. Salt pork chops, and sear on each side for about three minutes, until nicely golden brown.
    5. Add cara cara mixture, cover and reduce heat to simmer.
    6. Simmer for about 25 minutes, flipping chops every five minutes.
    7. In a dry pan add sesame seeds and over medium-low heat, and toast until fragrant. Keep an eye on them, they can burn easily.
    8. Remove lid, add 1 tbls. butter and turn heat to medium high for about 3 minutes to thicken sauce and glaze pork chops.
    9. Sprinkle with chopped parsley and sesame seeds, if using.
    10. Serve with wild rice and buttered steamed carrots.
