  • Mommo Otto’s Rice Balls

    Makes approx 20 – 25 balls. Cooked Rice balls can be frozen. Rice balls can be prepared & refrigerated for next day frying.

    Ingredients

    • 1lb box Carolina Rice
    • 1 Stick Butter or Margarine
    • 4-6 Eggs
    • Grated Cheese
    • Parsley
    • Mozzarella
    • Breadcrumbs
    • Vegetable Oil

    Directions

    1. Boil Rice with Butter in saucepan with little water & salt
    2. Beat 4 eggs with grated cheese and parsley
    3. When rice is cooked, combine rice & eggs in a bowl
    4. Stir rapidly until mixture becomes thick & pasty
    5. Let cool
    6. Cut mozzarella into small cubes
    7. Take handful of rice and shape into ball, stuffing a cube of mozzarella in center
    8. Beat 2 eggs into a separate bowl
    9. Dip ball into egg
    10. Dip ball in breadcrumbs
    11. Fry till golden brown in vegetable oil
