Mommo Otto’s Rice Balls
Makes approx 20 – 25 balls. Cooked Rice balls can be frozen. Rice balls can be prepared & refrigerated for next day frying. Ingredients
- 1lb box Carolina Rice
- 1 Stick Butter or Margarine
- 4-6 Eggs
- Grated Cheese
- Parsley
- Mozzarella
- Breadcrumbs
- Vegetable Oil
Directions
- Boil Rice with Butter in saucepan with little water & salt
- Beat 4 eggs with grated cheese and parsley
- When rice is cooked, combine rice & eggs in a bowl
- Stir rapidly until mixture becomes thick & pasty
- Let cool
- Cut mozzarella into small cubes
- Take handful of rice and shape into ball, stuffing a cube of mozzarella in center
- Beat 2 eggs into a separate bowl
- Dip ball into egg
- Dip ball in breadcrumbs
- Fry till golden brown in vegetable oil
