Mandarin Orange Tossed Salad
This is a great salad that goes with just about anything! Unfortunately, I can't remember where I got it... Ingredients
- Lettuce (or mix) of your choice, enough to fill a large salad bowl
- 3 stalks celery, thinly sliced
- 4 green onions, sliced
- 1 11-oz. can mandarin oranges, drained
- Caramelized almonds:
- 1/4 cup slivered almonds
- 2 Tbs. sugar
- Vinaigrette dressing:
- 1/4 cup vegetable oil
- 2 Tbs. sugar
- 1 Tbs. white vinegar
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 5 drops hot sauce
Directions
- Combine salad ingredients in a large bowl; cover and chill up to 3 hours.
- For the dressing, combine all ingredients and chill. Stir well before serving.
- For the almonds, combine the almonds and sugar in a small saucepan. Cook over medium heat, stirring constantly until golden brown. Pour onto waxed paper to cool.
- Just before serving, toss the dressing into the salad and sprinkle with the almonds.
