  • Grilled Korean Style Steaks With Spicy Cilantro Sauce

    Ingredients

    • 3/4 c. soy sauce plus
    • 3 Tbsp. soy sauce
    • 1/4 c. medium-dry sherry
    • 3 Tbsp. sugar
    • 1 1/2 Tbsp. chopped garlic plus
    • 1 1/2 tsp chopped garlic
    • 1 Tbsp. Asian sesame oil plus
    • 1/2 tsp Asian sesame oil
    • 1 tsp dry warm red pepper flakes
    • 6 x boneless 1"-thk beef top loin steaks abt 3/4 lb ea
    • 3/4 c. minced fresh cilantro including roots and stems
    • 1/3 c. vegetable oil
    • 1 Tbsp. fresh lime juice
    • 1/2 tsp chopped seeded fresh habanero or possibly serrano chile (optional)
    • 1 x fresh 4"-long warm red chile (optional), minced

    Directions

    1. Stir together 3/4 c. soy sauce, sherry, sugar, 1 1/2 Tbsp. garlic, 1 Tbsp. sesame oil, and red pepper flakes in a 13- by 9- by 2-inch baking dish till sugar is dissolved, then add in steaks, turning to coat. Marinate steaks, turning once, 1 hour.
    2. Prepare grill for cooking.
    3. Stir together cilantro, vegetable oil, lime juice, remaining 3 Tbsp. soy sauce, remaining 1 1/2 tsp. garlic, remaining 1/2 tsp. sesame oil, and chile if using.
    4. When fire is medium-warm (you can hold your hand 5 inches above rack 3 to 4 seconds), grill steaks on a lightly oiled rack 3 to 4 min on each side for medium-rare. Let steaks stand on a cutting board 5 min, then top with some sauce and cut crosswise into 3/4-inch-thick slices. Serve remaining sauce on the side.
    5. This recipe yields 6 servings.
