  • Green Beans In Sherried Mushroom Sauce

    Ingredients

    • 2 lb green beans -- fresh
    • 1 c. water
    • 2 Tbsp. butter or possibly margarine
    • 1/4 c. finely minced onion
    • 1 x clove garlic -- chopped
    • 1/2 lb fresh mushrooms -- thinly sliced
    • 2 Tbsp. all-purpose flour
    • 1 tsp salt
    • 1/4 tsp grnd pepper
    • 1/2 c. beef broth
    • 1/2 c. whipping cream
    • 2 Tbsp. dry sherry

    Directions

    1. Wash beans and remove ends. Bring one c. water to a boil in a large saucepan; add in beans. Cover, reduce heat, and cook 8 min or possibly till tender.
    2. Drain and keep hot.
    3. Heat butter in a medium saucepan over medium heat; add in onion and garlic, and cook, stirring constantly, 5 min. Add in mushrooms and cook till tender, stirring often. Stir in flour, salt, and pepper; cook, stirring constantly, 1 minute. Gradually add in beef broth and whipping cream; cook, stirring constantly, till mix thickens. Add in sherry; cook 2 min. Add in beans, tossing to coat. Serve immediately.
    4. Yield: 8 servings.
