Diabetic Lemon Meringue Pie
Ingredients
- 1 1/2 c. Water
- 4 pkt Equal (or possibly 1T sweetener)
- 4 1/2 tsp Cornstarch
- 2 x Large eggs
- 1/3 c. Lemon juice
- 4 x Egg whites (meringue)
- 4 pkt Equal (meringue)
- 1 1/2 tsp Cream of tartar (meringue)
Directions
- Cook all ingredients in double boiler till thickened.
- Pour into pie shell. Top with meringue that has been beaten stiff. Bake 450F for 15 min or possibly till golden.
