Crab Cakes
These crab cakes come out light, flaky and delicate in taste. Ingredients
- 1 # Crab meat - claw works best
- 1/4 cup Dijon mustard
- 2 eggs
- 1 cup bread crumbs
- 3 green onions thinly sliced
- 1 small bunch cilantro - about 8 stems worth of leaves
- 1 shallot
Directions
- Mix all the ingredients then form into patties that are 1/2 in inch think and approx 2 1/2 - 3 inches in diameter.
- Cook them in a frying pan on medium to medium high heat in extra virgin olive oil until golden brown.
