Chewy Crunchy Double Chocolate Brownies

They have two unusual ingredients: brown sugar and coconut, which add interesting taste variations and make them more moist than run-of-the-mill brownies. Be sure not to over-bake. They will be done in 20-25 minutes if using a bright aluminum pan; adjust time or temperature appropriately if using glass or dark pans. Ingredients
- 3 eggs
- 2/3 cup cooking oil
- 1 teaspoon vanilla
- 1 1/8 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2/3 cup brown sugar
- 2/3 cup granulated sugar
- 1/3 cup cocoa
- 1/2 cup coconut
- 1/2 cup chocolate chips
- 1/2 cup chopped walnuts
Directions
- Set oven to 350 degrees F. Grease a 9 x13 inch baking pan (the brownies tend to stick so THOROUGHLY GREASE pan.)
- In large mixing bowl beat together eggs, cooking oil and vanilla.
- In a separate bowl stir all the dry ingredients well together: flour, salt, baking soda, both sugars, cocoa, coconut, chocolate chips and walnuts.
- Add dry ingredients to egg mixture and mix just until blended. Spread in prepared pan and bake 20-25 minutes or until toothpick test clears in center (do not overbake.)
- Cool pan on wire rack for 10 minutes and then score or mark brownies and loosen around edges as needed. Finish cooling. Yield: 18 bars.
