  • Best Tomato Bisque

    Ingredients

    • 1/3 c. butter
    • 1/2 med onion chopped fine
    • 1/3 c. flour
    • 1 quart whole lowfat milk
    • 2 1/4 c. tomato juice
    • 1/2 tsp salt
    • 1 tsp sugar
    • 1/2 tsp celery salt
    • 1/8 tsp freshly-grnd white pepper
    • 1/2 tsp Worcestershire sauce
    • 1/2 tsp Tabasco sauce
    • 1 can diced tomatoes - (16 ounce) liquid removed
    • 1 can crushed tomatoes with puree - (28 ounce) Progresso preferred

    Directions

    1. Heat butter and saute/fry onion till tender. Stir in flour and heat to a bubble, stirring constantly. Remove from heat and slowly whisk in lowfat milk. Whisk quickly, but pour lowfat milk slowly.
    2. Return to medium-high heat and bring just to a boil. Add in remaining ingredients and bring to a simmer. Simmer gently stirring frequently for about 25 min. Ladle into bowls and serve.
    3. This recipe yields 6 servings.
